my eyes …

Well … the slow decline into middle-age has started. My eyes are going!

I keep finding myself holding menus farther and farther way and small print has become really really small!! Eeek.ร‚ย  ๐Ÿ™

I guess I gotta get my 42 year old eyeballs to an optometrist… the only thing that’s keeping me from being depressed about my ocular decline is all the rhinestone vintage frames I get to shop for now.ร‚ย  ๐Ÿ˜‰

Tea time!

I just added some new Earth’s Herbal Tea flavours to Sarah’s Place.

First is Yum Yum Sore Throat Tea. It is simply, Yummy! Drink hot or cold. As a hot tea is it great for the winter – sore throats orร‚ย  drink everyday, especially singers who want to “warm up”

Next is Tea for Sad People.ร‚ย  All the herbs in this blend are calming to the nerves without making you sleepy. Uplifting to the spirit and mood.

And while it may feel like spring is around the corner … we still have a few cold nights ahead of us so why not cuddle up with a cup of Earth’s Herbal Hot Chocolate. There is Mint, Mexican Spice and my favourite Turkish Delight.

Go Vegan Journals!

I was cleaning out my office the other day and found a cardboard box FULL of 2010 GoVegan calendars. Eeeep! So rather then toss the calenders I decided to reduce, reuse and get crafty with them.

Each journal has been hand-made/cut/bound by me in my kitchen and contains approx 100 blank pages (made with re-cycled paper). Also included in each journal is a recipe from the calendar (see HERE for details). Cover is card-stock. Journals are 6×9 inches.

100% of the proceeds from these journals will go to Dexter the dachshund who is a foster dog currently staying with us. Dexter came from a neglected house (you can read more about his circumstances HERE) and in an attempt to offset some of the costs of caring for Dexter I am selling these journals. ๐Ÿ™‚

What should you make for dinner tonight?

Want a recipe with easy to find ingredients that can be made in about 30 minutes?

How about the Cilantro Ginger Tempeh Noodle Toss from the 10th anniversary edition of How It All Vegan? ๐Ÿ™‚

This delightful meal can be served over rice noodles or a grain of your choice.

  • 1 bunch fresh cilantro (approx 1 cup tightly packed)
  • 1 medium tomato, roughly chopped
  • 2 small hot red peppers, seeded and roughly chopped
  • 1-inch piece of fresh ginger, peeled and roughly chopped
  • 2 tsp lime juice
  • 1/2 cup tempeh or firm tofu, cubed
  • 1 tbsp dark sesame oil
  • 1 13.5 oz (400ml) can coconut milk
  • 2 cups Chinese eggplant, cubed
  • 1 cup broccoli florets
  • 1 tsp salt
  • 1/4 tsp turmeric
  • 1/4 cup frozen peas
  • rice noodles, enough for 2 people

In a food processor blend together the cilantro, tomato, hot peppers, ginger and lime juice. Set aside.

In a large saucepan on medium heat, saute the tempeh in sesame oil for 3-5 minutes or until tempeh starts to brown. Stir in the coconut milk, eggplant, broccoli, salt and turmeric and let simmer uncovered for 10-12 minutes or until eggplant is cooked and sauce starts to reduce (stir occasionally). Turn off heat and stir in cilantro mixture and peas, cover with lid, and let sit 5 minutes.

While vegetables are cooking, in a large pot of salted water, boil the rice noodles. Drain, rinse with hot water, and return to pot. Toss noodles with a splash of dark sesame oil and set aside. Serve vegetables over rice noodles. Makes 2 large or 4 small servings.
