A week or so ago I gave you a link to Beth’s website where she has some yummy raw recipes, Beth also sent me her favourite breakfast recipe.
Well Gerry and I LOVE this recipe, so much so that we’ve had it 4 nights in a row. *laugh* I’ve tweaked it a little and written it down for the rest of you to try. We’ve actually been eating it with our dinner instead of a salad, but I’m sure you could eat it any time of day.
It’s VERY filling and sooo yum, so THANK YOU BETH for sharing this recipe and rocking my world.
Beth’s Fresh and Fancy Raw-Slaw
1 large carrot, grated
1 large apple, grated
1 cup grated sweet potato (or yam)
1/4 cup raisins
1/4 cup chopped walnuts (or pecans)
1 tbsp flax oil
In a medium bowl, combine all ingredients. Toss well and serve.
Makes 2 servings.
Oooohh.. You *grated* the apple instead of chopped it! I bet that IS nummy!

The slaw looks really good, but I’m just wondering if the raw sweet potato causes any ‘digestive’ discomfort…?
Also, about the below post – I loved to swim as a kid, and I used to swim like I was a mermaid too. If I had long hair, I would let it flow loose behind me in the water, rather than in a ponytail, so it looked like a mermaid’s hair. I even practiced swimming with my feet together like a fin, undulating my body. And you know what? I still do swim like that sometimes, but you’re right, it is a bit harder as an adult.

Wow! Grating the apple makes it much sweeter! We got a wild hair and topped it with some grated coconut – VERY YUM! I bet you could do a bit of pineapple instead of some of the apple + grated coconut for a tropical twist 🙂
Oooh the idea of the coconut, which I don’t normally like, sounds yummy. But I’m worried about the apple…if you don’t eat all the salad right away, how do you keep it from going yucky?
